Keep the table laughing cookbookIn a perfect world we wouldn't cook while on holidays but in most cases the budget just doesn't allow that and kids tend to prefer your home cooked delights to fancy restaurant meals.  Self contained holiday apartments are a favourite with families on holiday as meals can be prepared and $$$$ saved.  Susan Whelan and Meredith Flynn co-authors of "Keep the table laughing" have come up with some holiday cooking advice and a simple recipe to feed the family.

Tourist-trap sandwich prices by day, eating out every night – sometimes the food bill for a week away could feed the whole family at home for a month. This is easily avoided by staying somewhere with cooking facilities.

Nobody wants to overload an already full car with the entire contents of the pantry
and spice rack. However by planning ahead with a few simple recipes and allocating a small amount of space to a pantry staples kit (e.g. flour, oil, mixed herbs, tomato paste, pasta and noodles), holiday dining can be a lot cheaper and healthier.

Try to choose recipes that use up entire packets of ingredients, to avoid having a fridge full of unused perishables to dispose of at the end of your holiday.

Pick up the remaining ingredients locally to throw together simple family recipes. After a long day out and about, tired kids welcome familiar favourite meals over fancy restaurant food.

Try :

o Apricot chicken (chicken, apricot nectar and French onion soup mix)
o Pasta carbonara (fry onion and bacon, toss through cooked fettucine. Stir through a lightly beaten egg and serve with parmesan.)
o Toasted sandwiches or melts such as chicken and avocado add mayonnaise, spring onions and celery for extra taste)
o Potato bake (combine a packet of French onion soup mix with 300ml of cream. Pour over sliced potatoes, top with grated cheese and bake.)
o Croissants with savoury fillings such as ham and cheese
o Replace the pastry (its a waste to buy a whole packet for a few sheets) with ham in the following quiche recipe.


Quick QuicheQuick Quiche recipe
Ingredients
filo pastry
300 mL sour cream
4 eggs
2 shallots, chopped


Method
 Preheat oven to 180°C.
 Layer a few well-buttered sheets of filo pastry (or ham slices) into a lamington tin.
Mix together sour cream, eggs and shallots.
 Pour into filo, fold in edges and bake for about 30 minutes.
NOTE make the recipe your own by adding favourite fillers such as corn kernels, chopped tomato or grated cheese.
